Chocolate Chip Muffins

Muffins are quite the easiest treat to make, quick to make and as quick to be eaten as well. The trick with muffin making is to lazily stir with a metal spoon, and not attempt to get it well mixed..its quite alright to have floury bits, wet bits and lumps all muddled together - the muffins will come out beautifully soft and fluffy.



You need:
2 cups self raising flour (or a 2 cup mix of atta and maida and besan, and 1 teaspoons baking powder, 1 teaspoon baking soda)
1 cup brown sugar
1 cup choc chips, or a slab of chocolate  beaten into chips..excellent stress relief, and the calories get beaten out of the chocolate - honest
1 cup yogurt and water  mixed together
2 eggs
1 teaspoon vanilla extract
1 tablespoon all spice or one teaspoon garam masala
1 tablespoon canola oil
Preheat the oven to 190 degrees Centigrade

Steps
  1. Line a 12 cup muffin tray with large muffin paper cases
  2. Mix all the dry ingredients together in one bowl
  3. Beat eggs, oil, yoghurt and vanilla extract in larger bowl
  4. Pour the dry mix into the wet mix and stir lazily till only just combined
  5. Use two spoons to get the mix into the cases
  6. Bake in the preheated oven for 25 minutes
  7. Remove from oven, and take out muffins from the tray, and place on a cooling rack
  8. Warn greedy people that the choc chips or lumps will be hot and dangerous for a few minutes yet!
