Coconut rice is a rich savoury rice that converts an ordinary chicken or meat curry to a Sunday or special meal! Note that this is not a sweet rice but part of the main meal. You need2 cups rice - indian basmati preferred 1 cup coconut milk+2.75 cups of water 1 onion chopped 1 stick of cinnamon - about an inch 2 pods of garlic sliced 1 inch of fresh grated ginger 1 green chilli sliced half a teaspoon rai or mustard seeds I sprig of curry leaves - or about a dozen leaves 1 teaspoon haldi or turmeric Salt to taste Oil to fry GarnishFresh green coriander chopped Slices of fried onion Steps- Wash rice thoroughly and drain.
- Pour oil into pressure cooker or pan, when heated add rai and when it stops popping, add the curry leaves.
- Add the onion, and fry until golden brown, add ginger and garlic and fry in a desultory fashion till the raw smell vanishes.
- Add green chilli, cinnamon and turmeric. Mix in quickly.
- Add the rice and stir will coated with the oil and fried masalas. Ensure all the water has dried up.
- Add the coconut milk and water. Add salt.
- Close the pressure cooker and allow it to heat up. Turn the gas to high. When a strong stream of steam comes out of the vent, put the weight on.
- When the cooker comes to full pressure with a strong prolonged hiss or whistle, turn it off and leave for a couple of minutes.
- When the pressure has dropped, open the cooker, and fork up gently.
- Sprinkle with green coriander and sliced fried onions and serve immediately.
Steps in a pan or dekchi- Follow steps 1 to 6 above. You can increase the water by a quarter cup.
- Allow the water and milk to come to a good rolling boil, you should see tunnels in the rice. Close the pan with a tight lid.
- Turn the heat down, and allow to cook for 12 minutes.
- Turn off the heat, and allow to cool for a minute or two.
- Follow steps 9 - 10 above.
To be eaten with chicken curry, ball curry, or any other meat curry, Serve with papads, kachumber or raita, and mother-in-laws tongue. you will need to retire for a siesta after this meal.. |
