Portuguese Fish



Portuguese from Goa..

This is really easy and makes a light supper, just eat it with bread and a salad. Or just bread and butter. You can garnish with green coriander if you have some, but it really doesn't need it!

1/2 kg salmon, or other fish, in slices or chunks

2 onions, in rings
2 tomatoes, in rings
1 inch ginger chopped fine
2 cloves garlic, chopped fine
2 green chillies, slit and seeds shaken out
2 tbsp olive oil
1 tbsp apple cider vinegar
Salt

Layer the onions and tomatoes in a shallow pan, cover these with the ginger, garlic and chillies.  Pour in a cup of filtered water. Turn the heat onto medium, cover and cook for 15 minutes, or till the onions are soft and the tomatoes barely holding their shape. Pour in the olive oil in a figure of eight, and carefully place the fish in a single layer over the mixture. Cover and cook for 2-3 minutes, depending on the thickness of the slices or chunks.
Turn over carefully, with a knife. Cover and cook for 5 minutes. Sprinkle the salt and vinegar over the fish. Serve immediately. Again, dont attempt to transfer to a serving dish!
