This is a no-cook sweet, but its not a no work sweet! You will need to use upper body strength to mix! You need: 225 g fine dessicated coconut or one packet of Mckenzies Shredded Coconut 4 cups caster sugar 1 cup condensed milk 1 teaspoon vanilla extract Pink colouring Butter a baking tray or plate before starting. Mix caster sugar, vanilla extract and coconut together, stir till well combined. Add condensed milk and stir vigourously to get a well mixed and smooth texture. Place about half the mixture into the greased tray and press down evenly in the first white layer. Add a drop or less of pink colouring, to the remaining half of the mixture, and mix in thoroughly. The mixture will get pink very slowly, do not be tempted to add any more colour. When it is more or less evenly pink. spread out in a second layer on top of the white layer. Place in fridge for a couple of hours. Remove and cut into squares. Place squares in container, and keep in fridge. |
