| Preheat oven to 220 C
| You need 1/4 cup butter
| Place pan on the heat and melt the butter, slowly. Place 2 tablespoons of the melted butter into the blender.
| 1 large sweet apple, or 2 small apples | Peel, core and quarter and slice into 1 cm thick slices. Place into butter in a layer and turn the heat down, let it cook for 5 minutes while you get on with the batter.
| 4 eggs 3 tablespoons sugar 1/2 cup milk 1/2 cup flour 1/2 teaspoon vanilla pinch of salt
| Add to the butter in the blender and whisk till blended. Pour into the pan with the apples and butter. Place in the heated oven for 15 - 20 minutes. The pancake is ready when puffed up enormously and golden. Dust with caster sugar and serve with wedges of lime, to encourage hungry people to slow down and squeeze the juice over it. This step prevents children from inhaling the hot pancake into their greedy little gobs.
